Stuffed baked potato


During this rainy season, I have just the right menu for everybody. This is a baked potato stuff with a delicious sambal meat . It is soooo easy to do and it taste good too. I don't really follow a specific recipe for this dish as it is too simple to make.

Any potato can be baked, but for the perfect baked potato with the desired flaky texture, it is recommended that mature, baking-type potatoes such as the Russet be used. Make sure that the skin has a nice even brown tone without a greenish cast.
To make the cooking easier, boiled the potatoes half cook. Drain . You make a hole in the centre of the potato and stuff it with a sambal meat. Wrap it with an aluminium foil. Bake it in the oven.

NOTE: Wrapping the potato in aluminum foil will produce a soft skin, too, but technically this is steaming rather than baking (as the moisture in the potato remains trapped) and the light, flaky texture will be missing.
To make the sambal, all you need to do is to fry garlic, add minced meat with a tomoto puree. Stir until the meat turn colour then add in thymes leaves. Lastly fold in with the mayonaise.

Tahniah Abang Tan!

This is Perak's new MB. YB Ir Haji Mohamad Nizar Jamaluddin. Kalau my arwah bapak is still alive, I'm sure he will be very proud of Abang Tan's achievement - one of his closest nephews.

Strawberry Muffin



My apology to all for neglecting this space for quite some time. Sibuk a bit - been busy with a new project (can't tell yet lah! Will inform once all system go).

I'll try to update this blog more regularly. In the meantime, yesterday my Alia and Asma baked this simple muffin - strawberry muffin. By right, they should have been using fresh strawberry but found out that it was all rotten. So they fell right back to plan B - used strawberry paste instead and some pink colouring (for that extra colour lar).

Here is the recipe.

Ingredients:
125 gram butter
100 gram sugar
180 gram self rising flour
150 l fresh milk
2 eggs
2 tsp soda bicarbonate
1 tsp strawberry paste
pink colouring

Method:

1. Preheat your oven to 350F-Grease and floor muffin pan-Melt kan butter and add in sugar-stir it and then pour milk .Add in eggs and strawberry paste.

2. In another bowl, mix the flour with the sodium bicarbonate.

3. Combine the dry ingredients to the wet ingredients and fold it.

4. Pour into the muffin pan ( only fill each cup 1/2 or 2/3 full) and bake for about 15-20 minutes.

The main method is to combine the dry ingredients to the wet ingredients. You can use the spatula or fork to combine the mixture.

Do not over mix, it will make your muffin tough.

Use paper or foil muffin cup to keep the muffin moist and cantik.

Muffins should be baked in the centre of the oven.

Biskut dari Gopeng

Went back to my kampung last weekend. We dropped by a charming old Chinese grocery store in Gopeng. And found these two delightful "biskut kering" of yesteryears.

This, if I'm not mistaken, is known as Biskut Kepala Lutut. Silly name, I know. This is good if eaten while you are having a Kopi O or Teh O. Steaming hot. With loved ones. When I was younger, we used to crush the biscuit before mixing it with grated coconut and lots sugar. Ahh, heaven!

This I do not know the name. Can someone help here? It's coated with sugar and tasted as good.

Chilled Blueberry Cheese Cake

This a lazy person's cheesecake. It is so easy that you don't even have to bake. How's that? And it tastes good too... a bit like ice-cream. But it is still a cake. Here I'm using blueberry filling. But you can also use strawberry.

Ingredients:
500g cream cheese
60g butter
100g biscuit crumbs
200g whipped cream
100g caster sugar
250g blueberry filing
1 tbsp gelatin+3tbps water (dissolve in hot water)

Methods:
Mix biscuit crumbs with butter. Press it into the base of spring foam cake tin and chilled for 10 minutes.
Mix whipped cream, cheese and sugar. Blend all these until smooth. Then add in he dissolved gelatin. Finally pour in the blueberry filling.
Pour the mixture on top of the biscuit base. Chilled the cake overnight. In the fridge.
You wake up the necxt day and there's a cheese cake waiting for you in the fridge. Isn't that cool?


Tips:

1. Blend the cheese cream before you add in the sugar and whipped cream for that fluffy texture.

2. You may replace whipped cream with sour cream.

3. Depending on your preference, you may mix the blueberry filling with the cream cheese mixture (like I did) or you can just pour it on top of the mixture as a topping.

Pulut with Gulai Taucu


This morning, I made this for breakfast. A rather nostalgic breakfast fare, actually. Pulut (glutinuous rice) with gulai taucu ikan bilis dengan cili hijau (taucu with anchovies and green chillie soup). When I was young, my arwah bapak would have this as his main breakfast staple. On our way to school, we would usually stopped by a small warung in Sungai Lesong (somewhere in Tapah/Kampar area) for him to have his daily dose of pulut with gulai taucu. He wouldn't let me joined in as he figured I was too young to be having a pulut so early in the morning. No wonder he suffered from hypertension.
Nowadays, when we balik kampung to my sister's place in Kuala Dipang, husband and I would frequent this one gerai near her place for breakfast. Reason being, the gerai sells pulut with gulai taucu. Sedap.

Honey Curry Chicken

My family and I love eating. And we enjoy sampling a wide variety of food.
Obviously I love cooking too. I love food that's bursting with fantastic aroma and flavours. Like this Honey Curry Chicken. A recipe taken from my sister. Of course I reworked the recipe to my liking.
This recipe is deliciously special that I truly suggest you to try it. It allows you to combine something simple with a few other ingredients to create a dish that is perfectly full of flavours.


Ingredients:

1 whole chicken ( cleaned and cut into 16 pieces)
2 small packet of chilli powder
10 dried chilies (blended)
3 clove of large onions
2 clove of garlic
2cm of ginger
curry leaves
2 sticks cinnamon
2 star anise
a bit of oyster sauce
1/2 cup honey
salt and sugar to taste
oil for frying

Method:

  1. Fry the chicken until 3/4 done. Set aside
  2. Heat the pan with oil. Add in onions, ginger, garlic, cinnamon sticks, and curry leaves.
  3. Stir fry for 5 minutes until the beautiful aroma fill your kitchen
  4. Add in dried chillies (blended) until the colour changes.
  5. Meanwhile, add water to chili powder and pour it into the pan.
  6. Add in the honey and oyster sauce. Sprinkle the sugar and salt to your liking
  7. Finally, add in the chicken,. Stir fry for another 5 minutes.
  8. It's now ready for you to enjoy. Try it.

Tips and tricks:

  1. Only add in the honey and chili powder towards the end of your cooking time as it will make the taste of the dish bitter if you overcook it.
